Nómada Opens in Carlsbad: A Bold New Mexican Restaurant Rooted in Heritage, Travel, and Community

There’s a new chapter in North County’s Mexican food scene. Nómada is now open in Carlsbad, bringing a deeply personal, travel-inspired take on Mexican cuisine to the former Crazy Burro / Ignite / Alejandra’s space along El Camino Real.

Led by celebrated chef Alex Carballo, Nómada blends the flavors of coastal Baja with influences from the mountains of Veracruz — resulting in a menu that feels both soulful and elevated, without losing its sense of fun. This is a restaurant designed for lingering dinners, late-night cocktails, weekend brunches, and gatherings that turn into celebrations.

A Menu That Honors Tradition — and Pushes It Forward

At its core, Nómada is about honoring Mexican food with intention. The menu leans into bold sauces, thoughtful technique, and high-quality ingredients — executed in a way that feels right at home in North County.

Standout dishes include birria chimichanga bites, duck confit tacos with mole negro, charred pulpo with crispy papas, and a deeply satisfying chicken mole that has already sparked plenty of “finally” moments among locals. (Yes—North County now has excellent mole. No excuses.)

Seafood lovers will want to explore the raw bar and crudo selections, while groups can go big with family-style wood-fired fish, cochinita pibil, or even a 24-ounce bone-in ribeye meant for sharing.

Cocktails for the Wanderers at Heart

The bar program is just as thoughtful as the kitchen. Nómada’s cocktail list pulls inspiration from across Latin America, featuring bright citrus, botanicals, spices, and unexpected pairings.

Fan favorites already include the Clericó (bright, balanced, and dangerously drinkable), a Ranchero Paloma with cinnamon and grapefruit, and mezcal-forward creations layered with vermouths, shrubs, and fresh fruit. There’s also a strong showing of Mexican beers, wines, and non-alcoholic options like chicha morada and tepache.

Nómada is more than a place to eat; it’s a place to gather. With both indoor and outdoor seating, the space is designed to host everything from birthday dinners and corporate outings to fundraisers, book clubs, and late-night fiestas. The energy is warm, social, and unpretentious — the kind of room that makes you want to order “one more thing” and stay awhile.

Live music nights, guest DJs, and rotating events add to the sense that something’s always happening here, especially on weekends.

Brunch Offered on Weekends

Weekend brunch is officially live at Nómada, served Saturdays and Sundays from 10 AM to 2 PM. Expect Mexican-inspired comfort dishes, strong coffee, brunch-worthy cocktails, and a vibe that feels both inviting and decadent.

Chef Alex Carballo brings decades of experience across San Diego’s most respected kitchens, including Carte Blanche, Valentina, Indigo Grill, Brigantine, The Fishery, and his nationally acclaimed tenure at Stone Brewing World Bistro & Gardens in Escondido. Named one of Restaurant Hospitality Magazine’s “12 to Watch,” Carballo is known for creating memorable, community-driven dining experiences that balance creativity with approachability.
