Leu Leu Leucadia Welcomes Chef Jason Ambacher: A New Chapter in Seasonal, Mediterranean-Inspired Dining

Leu Leu Leucadia has officially announced its next culinary evolution with the appointment of Chef Jason Ambacher, a Michelin-recognized chef celebrated for ingredient-driven cooking and a deep respect for seasonality, foraging, and fermentation. The move marks a significant moment for the popular coastal dining lounge as it enters “Chapter 2,” returning to its roots while embracing new horizons.

Michelin Experience Meets Mediterranean Heritage

Chef Jason Ambacher comes to Leu Leu following his role as Executive Chef at Oceanside’s Dīja Mara, a five-time Bib Gourmand recipient and one of North County San Diego’s most acclaimed kitchens. Known for a style that blends elemental techniques with bold yet thoughtful flavors, Ambacher’s cooking is shaped by his Greek heritage and his grandfather’s kitchen — where foraging, fermenting, and earth-centered practices were everyday essentials.

“I’m very excited to be joining the amazing team at Leu Leu,” Ambacher says. “It’s an opportunity to honor my Greek roots while exploring Mediterranean cuisine more deeply — all within a beautiful, intimate, and creative space.”

A Return to Leu Leu’s Roots

As Leu Leu reflects on its beginnings and looks ahead, owner Jason Janecek describes the transition as a grounding moment for the restaurant.

“Chapter 2 is a return to our roots — a moment to remember why Leu Leu was born in the first place,” he shares. “Fire transforms, but the earth steadies. Leu Leu has danced in the fire, and now she settles back into the earth — to feel her body, her breath, her truth. With Chef Jason’s arrival, the soil stirs and growth begins anew.”

This philosophy underscores Leu Leu’s commitment to intuitive cooking, community connection, and the warmth of shared meals — all core elements since its opening earlier this year.

What Guests Can Expect From the New Menu

Under Chef Ambacher’s guidance, Leu Leu’s menu will gradually evolve, preserving the restaurant’s globally inspired spirit while introducing new Mediterranean-leaning dishes and earth-forward techniques. Expect:

  • Seasonal, elemental plates
  • Mediterranean-influenced dishes with Greek sensibilities
  • Flavors shaped by foraging and fermentation
  • Ingredients sourced thoughtfully from land and sea
  • Woodland and shoreline-inspired preparations

These additions will roll out over the coming weeks, ensuring a seamless, guest-friendly transition that honors both the restaurant’s past and its evolving identity.

Leu Leu remains a space for neighbors, wanderers, regulars, and friends to share good food, wine, music, and conversation. As the holiday season invites reflection and connection, the restaurant celebrates the community that shaped its first chapter — and those who will join for its next.
