Leu Leu Leucadia has officially announced its next culinary evolution with the appointment of Chef Jason Ambacher, a Michelin-recognized chef celebrated for ingredient-driven cooking and a deep respect for seasonality, foraging, and fermentation. Chef Jason Ambacher comes to Leu Leu following his role as Executive Chef at Oceanside’s Dīja Mara, a five-time Bib Gourmand recipient and one of North County San Diego’s most acclaimed kitchens. Known for a style that blends elemental techniques with bold yet thoughtful flavors, Ambacher’s cooking is shaped by his Greek heritage and his grandfather’s kitchen — where foraging, fermenting, and earth-centered practices were everyday essentials.
“I’m very excited to be joining the amazing team at Leu Leu,” Ambacher says. “It’s an opportunity to honor my Greek roots while exploring Mediterranean cuisine more deeply — all within a beautiful, intimate, and creative space.”
As Leu Leu reflects on its beginnings and looks ahead, owner Jason Janecek describes the transition as a grounding moment for the restaurant.
“Chapter 2 is a return to our roots — a moment to remember why Leu Leu was born in the first place,” he shares. “Fire transforms, but the earth steadies.
