For the uninitiated, Hatch Chiles are more than just a pepper. These prized green gems hail from New Mexico’s Hatch Valley and are celebrated for their unique combination of heat and sweetness, adding a bold, smoky flavor to everything from salads to stews. When roasted, they take on a rich, savory character.

This year, Gelson’s Kitchen has upped the ante, offering a delectable lineup of Hatch Chile-infused dishes that cater to every spice level—whether you’re a mild-mannered spice seeker or an extra-hot heat enthusiast. Gelsons will offer Hatch Chile Super Lump Crab Cakes, Hatch Egg Salad, Hatch Chile Grilled Corn & Heirloom Tomato Salad, and even a creamy Hatch Mac & Cheese. There’s also Hatch Chicken Sausage with Onions and Peppers, Hatch Chicken and Cheese Quesadillas, and Hatch Chile Turkey Meatballs.
